A peculiarity of our production phases is the washing of the olives at low temperatures with the help of a chiller that keeps the water before pressing at temperatures lower than 20?C, fundamental condition for encouraging the formation of an aromatic bouquet.
Grinding takes place at temperatures always lower than 27?C.
Subsequently, the oil is filtered to stabilise it and reduce oxidative processes, thereby increasing its longevity; it is then stored in stainless steel storage tanks under argon in air conditioned environment.
The filling is automatic with argon gas injection before and after filling the bottles in order to completely eliminate any contact of the oil with air which would cause oxidation resulting in premature aging of the product.
